Apricot Balls

We started making our Christmas cookies today.

How do these little darlings look? I guess it depends on your feelings toward the ingredients, doesn’t it? The two main ingredients in these cookies are apricots and coconut. With a few other simple ingredients, these balls come together in no time.


I ate these cookies as a child, usually at Christmas time. These aren’t a Christmas cookie to my knowledge but they still are classified in the category of cookies. My mother would make all sorts of sweets during the year, and at Christmas time the effort was at least doubled. Slowly she would make sweets, leave a few of them on the counter for us to snarf down and freeze the rest of them for special occasions. Out of sight, out of mind worked well for many years, under I was much older when I discovered all the hidden treasures in the freezer and would occasionally ‘sample’ a few, just to make sure they were still OK.


A few years ago (or more?) my mother gave me one of her cookie books. One of the cookies she had made notes about was this particular cookie. I’m guessing there are a couple of reasons for her choice of this cookie. It’s easy to make. It uses very few ingredients. It doesn’t require any baking. It tastes good. And it has a semi-tropical feel about it, which is special when winter is so, so cold and thoughts of anything tropical and warm are so far away.


Well, my daughters and I whipped these up today and though we didn’t eat any, after licking our fingers we found them to be as delicious as ever. Now we just have to wait for Christmas. Oh, and I have to guard the freezer to make sure my daughters don’t do any unnecessary sampling!
