February's Cooking Class

Today was another cooking lesson day. Great food, friends and conversation made for a good time.

Today’s menu was simple, but effective.


First up was the main course, namely Chicken Caesar Salad. I like this recipe for its simplicity. The chicken is quickly prepped and shoved in the oven while the dressing and greens are prepared.


Once the chicken comes out of the oven, the salad is dressed and the salad and chicken come to the table, where everyone helps themselves and mixes their own salad of greens, chicken and bread.


The meal is simple yet there are nuances that elevate this dish to more than the sum of its parts. But with simplicity comes casualness and happiness.


This is food for friends and family. It’s wholesome, healthy and hearty.


After lots of chatting and eating, we continued chatting and getting ready for dessert.


On the menu today was the simple, though elegant chocolate pots.

A blossom of whipped cream, a spoonful of dark cherries, and a biscotti to enjoy with the chocolate pot.


Together with a cup of coffee, this was an adult’s dessert. Yet any child, nay the child in all of us loved eating this down to the last spoonful, when we carefully cleaned the last remnants of chocolate. Unfortunately, the adult in us refrained from shouting, “One more, please!” though we surely thought it.


The stomach and the soul were satisfied today. As always, thanks to the students; until the next lesson.
