Broccoli Bites

Here’s a side dish that I threw together to have with tonight’s meal using broccoli.

Calzones were on the menu tonight but I wanted some more vegetables to be part of the meal.


A salad would have been a good option but we’ve had a bit, nay, lots of rain this summer which means the price of vegetables is really high now.


We had a head of broccoli that was getting a little long in the tooth so I decided that would have to be the star vegetable (the adult version of the calzone had more vegetables than the younger adult version).


A bit of web surfing led me to a recipe for little bite-sized pieces of what looked like broccoli muffins.


Using this idea, I mixed some cooked broccoli, an egg, some mayonnaise, some cheese, some parsley, some spices and some bread cubes and dumped the mixture into my muffin containers.


I didn’t taste them before they went into the oven but after the first batch had cooked and cooled I stole one in the name of research. Great!


They have a bit of cheese taste, a bit of parsley taste, and a bit of something taste. They have a crunchy, toasty top, and are soft and where the cheese is they are a bit chewy.


What they don’t have is a strong broccoli taste. They taste good. Really good.


Surprisingly, my daughters ate half of the broccoli bites before their calzones were cool enough to eat. They even ate some of them after eating their calzones. They consumed much more broccoli today than they usually would.


These would be great for a party as a finger food. If you have broccoli, give these a try.
