November's Cooking Lesson

Our last cooking class for the year. And what was on the menu? Simple, comforting foods.
The goal for today was to have a menu that could easily be made by the students at their homes, individually without taking too much time or effort. During the lesson today, I think that goal was reached. The food was great and by the end, I was full but not stuffed. Perhaps it was due to the various foods and amounts.

First to be made was the dessert, a quick mango ice cream. Served after lunch with a bit of mint, it was cool, creamy and satisfying.

Next to be made was the chicken pie. It all came together pretty quick, and in no time it came out of the oven golden brown and bubbling away. Under that topping was chicken and mushrooms in a sauce that was yummy.

Last to be made was some minty peas. The ingredients for this dish were few, and using frozen peas it was ready within a couple of minutes.

The lunch was simple but satisfying, and don’t forget, we had to save room for the dessert of mango ice cream. While finishing dessert we also sampled a small tasting of items I threw together as a finish to the meal. It included some cheese, sausage, roasted red pepper, and some membrillo. Utterly satisfying.

Next up will be our annual Christmas party for the cooking class. I can’t wait to see what foods we’ll have!
