Filo Dough

Spinach, goat's cheese, eggs. We can make Spanakopita. No filo dough? Time to make some!

Spanakopita is a delicious spinach dish that I love to eat. We don't find it anyway around here, but luckily enough, it is fairly easy to make. But, without any filo dough, how can spanakopita be made?


I've been in this situation before, so I knew I could either order filo dough over the internet and wait one or two days to make it, or, I could make the filo dough myself. I've made filo before, so I decided to go that route.


Filo dough is a simple dough recipe and it just requires practice and time to get the sheets of dough nice and thin. They will never be as thin as store-bought filo as long as I'm making it, but that's OK. They still taste great and the recipe will still turn out OK.


I made 9 sheets of filo dough in total and it was perfectly enough for my square baking dish. I put layers on the bottom, in the middle and on top. The spinach mixture had goat's cheese, spinach, freshly made ricotta cheese, green onions, dill and eggs.


The spanakopita baked well, with a golden, crispy top, and the spinach mixture inside was yummy and creamy.


I 'filo' fine about making my own filo dough. You should, too!
