January's Cooking Lesson

We’ve started the new year with a busy and filling lunch for our cooking lesson students.

Today’s menu: Beef Hash, Jacket Potatoes, Tomato Smokey Beans, and Salad with Avocado Dressing.


There was a lot of chopping, mixing and cooking going on today. The beef hash has beef in it, of course, but it also contains a lot of sliced vegetables. The jacket potatoes were microwaved, then baked so that the outside was crispy but the inside was soft and fluffy. The beans were cooked with tomatoes and bacon and end up having a lot of umami. The salad was simple lettuce, arugula and avocado with a green goddess-like dressing made from avocado.


Healthy and hearty, it was a nice start to the year.
