I'm not a jerk, but our chicken is!

Today we enjoyed some flavours from the Caribbean for our dinner.

Today’s dinner was Jerk Chicken and rice with beans.The chicken marinated in a jerk paste along with some pineapple juice during the day.If I had the time, it would have been even better to cook the chicken on a grill, but time constraints what they are I cooked the chicken in the oven.After the chicken was cooked, I poured off the juices (I had added orange juice to the bottom of the pan so the chicken drippings wouldn’t burn) into a pan and thickened it into a glaze.Lastly, the chicken was coated with the glaze and the chicken was briefly warmed.My family started dinner without me, as I had a lesson to teach. They all complained about the spiciness of the chicken, but that didn’t stop them from eating over half of it.Yes, it was spicy but not overly so. I still added some bottled Caribbean hot sauce to my food and enjoyed the burn.Fresh herbs, such as coriander would have been great with this, but we had non in the garden and stores do not sell many herbs, especially coriander around here.I didn’t have the warmth of the sun, the sand, or the rum, but the spice from the food was plenty warm for us.
