Easier Fig Newtons

I made some Fig Newtons today.

I’ve made Fig Newtons before, but today I wanted to make things easier.The recipe I used last time creates a very soft dough that is tricky to work with.I decided to see if I could make one giant cookie, which could then be cut to size.After some searching on the internet, I decided to make a soft cookie dough similar to what would be used for chocolate chip cookies.With a basic cookie dough, made with a few slight modifications, I laid down a bottom layer of dough, covered it with my fig paste, and then covered it with another layer of cookie dough.Once baked and cooled, the big cookie was soft enough to cut into squares of any size.Most importantly, the cookies taste great.Easy to make, bake and eat. What more do you want?
