Su-ki-ya-ki !

Tonight, we enjoy a classic Japanese dinner.

Sukiyaki is not an everyday food in Japan, at least for us (and most people we know).But tonight is kind of special, so we are enjoying this.One of my fondest memories here in Japan was watching my wife’s father prepare the sukiyaki.He’d start with some fat in the big pot in front of us on the table, heated by a gas burner. Sliced meat would be added, along with some sugar, sake and soy sauce. Various vegetables and other items were added and the food cooked. Slowly, we’d start eating and enjoying the sukiyaki, some of us as is, others putting their food items into bowls which had a freshly beaten egg (raw) inside which helps mellow the taste and add richness. I’ve never been crazy about raw eggs, so I always have eaten my sukiyaki without the raw egg.After a while, someone invariably would suggest that the sukiyaki needed some adjustment. For example, someone might say it was a bit too sweet. To correct the imbalance, some sake and soy sauce would be added. After a while, someone might then note that it was a bit too salty, and again corrections would be made. This process of continually enjoying and correcting the sukiyaki continued throughout the meal. To this day, I have no idea how ideal sukiyaki should taste. Nevertheless, I enjoy it whether it is too sweet, salty, thin or otherwise.Tonight we enjoyed our sukiyaki and I have no complaints about it. I was happy to partake of this food and I really look forward to tomorrow’s leftovers. If you’ve never tried sukiyaki, find a recipe online and give it a try. It is not a difficult food to make and I’m sure you will enjoy it.
