Perogies

Someone once said, when you get lemons, make lemonade. I say, when you get potatoes, make perogies.

In recent weeks, we’ve been lucky enough to get potatoes from friends and acquaintances that they grew in their gardens.


We’ve been enjoying them a number of ways (boiled, with some olive oil, herbs, salt and pepper), fried (hashed browns) and so on.


But lately I’ve had a hankering for perogies. My daughters also love perogies, so tonight’s dinner was popular with them.


My youngest daughter helped making the perogies, from the dough, to the potato filling, to filling and shaping the perogies. My Babas would be proud.


We had a good feast of perogies tonight and while there were a few leftovers, I don’t expect them to last too long.
