Chinese BBQ Pork or チャーシュー

I cooked up some pork this weekend and used a seasoning package sent to us at Christmas time.

One of my favourite foods to eat when I went to buy foods at Asian stores in Canada was the Chinese BBQ pork. There would be chunks of pork hanging by hooks under a heat lamp in the meat section, with a shiny glaze on the meat and the smell of...deliciousness!Once you chose to buy some meat, the vendor would take meat off of the hooks and slice the meat with a cleaver. The meat would be packaged in pink meat-wrapping paper (the paper doesn’t leak any liquid) and you would receive your warm package. All the way home you could smell that delicious meat, and of course you would have to open the package before you got home to sample the meat, and sample the meat, and so on.When I was in Hong Kong two years ago, I ate BBQ pork on a number of occasions. The last one was when we came across a number of meat shops, all with various meats hanging in the windows, tempting passersby. Although we’d only eaten breakfast a short time earlier, I had to stop in at one of the shops, gesture to get a large package of the BBQ pork, and then find a clean curb on the street so that I could take a break and indulge in the feast. Let it be known that I wasn’t the only one who finished off that package.This pork is used in a variety of dishes at restaurants, as well as soups and baked goods.So,I decided to make this pork and then have it for 2 dinners: first, just the meat chopped/sliced and served with white rice and various side dishes, and secondly inside steamed Chinese buns.

The pork was easy to cook and the smell was amazing. Here the pork is glazing in the sauce which has thickened after heating it for a while.Two of the pieces were for the first night’s dinner. There are no pictures but let me explain why. The food was sliced and put on a plate, but before everyone could sit down our two daughters were drooling and asking if they could start eating. Had I taken the time to get my camera and start taking pictures, I would have had only some of the glaze to eat.The second night’s dinner, the steamed Chinese buns were prepared by my wife. Again, no pictures, again the same excuse. Who knew that girls could eat as much as boys? I think back to my own teenage years and it scares me now with my two daughters!Two meals well enjoyed! I must make this again.
