Lemon-Sudachi Meringue Pie

Today, I made some pie.

The other night, while reading the book ‘Amelia Bedilia’ with my daughters, my younger daughter said ‘Dad, let’s bake some pies.’


So, this morning I found myself making pie crust after finding a couple of recipes for lemon pie.


We recently received a lot of sudachi from friends. Sudachi for those that don’t know are small citrus fruits that look like Key limes. I needed a half cup of juice for my pie recipe and sudachis had a lot of seeds, making squeezing them a chore.


I double-checked with my daughter who allowed me to use both sudachis and lemons to make the pie. The lemons were much easier to juice.


I also added the zest from both the lemons and some of the sudachis, so the little dark specks in the pie picture above are pieces of sudachi zest.


The pie is sweet and tart and the meringue topping is sweet and creamy, balancing the tartness from the pie.


This pie will probably disappear tomorrow. Considering that I still have a lot of sudachis in the fridge, I think I’ll be making some more pies in the next couple of days.
