Naruto Moussaka

Today I made Moussaka, but with a twist.

Today was one of those days.I seemed to be on my feet, cooking in the kitchen for the better part of the day. Of course, this isn't true, as I did a variety of other things (walking Muffin, shopping, chopping wood, and so on).But I did do a fair bit of cooking today.It started with some sweet potatoes. Naruto Kintoki sweet potatoes to be exact. I received a bag-full of these sweet potatoes last night from one of my students. They taste great, and everyone in our family, especially Muffin love these sweet potatoes.We had a fire in our wood stove this morning, to take the edge off the coolness in the house. After the wood was almost completely burned, I put in the sweet potatoes and after about 20 minutes they were cooked and smelling sweet and delicious.I decided to use these sweet potatoes for making Moussaka, which in my opinion is a Greek-style lasagna made with the vegetables eggplant and potatoes instead of noodles.But, before making the Moussaka, I had to make a pot of Chili which I'd promised to make for tomorrow's dinner (I like to make it a day ahead of time to let the flavours develop better).After the Chili was cooking, I cooked the eggplant, first in the microwave, then baked in the oven to draw out moisture from the eggplant.Rather than making a white sauce and a tomato sauce with meat, I decided to combine the two into one white sauce.I fried ground chicken and made a white sauce, then layered the sweet potatoes and eggplant. I finished the dish with cheese on top and baked the Moussaka.Seeing as we'll eat the Chili tomorrow (with cornbread, of course) it looks like we'll eat the Moussaka on Monday. That's too bad, as I have no idea how the Moussaka tastes. I know that each component, the sweet potatoes, the eggplant (rubbed with olive oil and salt and baked until golden brown), and white sauce taste great individually. Baked together, I'm guessing that it will be pretty good.Wait and see.
