Pickled Easter Eggs

I pickled some eggs in the lead up to Easter.

Many of the Easter decorations I have up on my walls and windows for Easter show colourful Easter eggs.Today my family is going to meet friends for an early 花見/hanami/Cherry Blossom viewing party.I decided earlier in the week to make some pickled eggs to bring along to the party.The resulting eggs, though not perfect are nevertheless colourful and tasty.One batch of eggs are pickled in beet juice with spices. Beets can be difficult for me to find, and so I've got my own supply of processed beet juice concentrate for when I need to make some Borscht. The beet juice is processed (cooked) so the colour isn't as beautiful as the juice from fresh or canned beets, but it still is purple-y and the taste is good.The second batch of eggs were pickled with a curry-spice blend (odd and ends mixed together).Along with some pickled onions, the eggs turned out really nice. This is the first time for me to try the curried pickled eggs and I love the colour and taste of them. Next year (I've done enough for this year) I think I'll try some chili pickled eggs, and maybe some spinach wasabi pickled ones.And now, off to the party.
